Cabernet Sauvignon Red Wine
The cabernet are rich in color, aroma and depth. While it may be enjoyed when it is young, its high tannin levels may be overwhelming to the uninitiated. Proper aging can result in a smooth and delicious wine with distinctive spice-accented, long-lasting flavors. Classic flavors include currant, plum, black cherry and spice.
The grape is small and tough skinned, providing tannin, body, and a multitude of aromas to the red wines of Bordeaux - although it is always blended in some combination with Merlot and Cabernet Franc. The best vineyards in the Medoc (Left Bank Bordeaux) have up to 80% Cabernet Sauvignon, blended with other varietals. Now almost universal with California's success in the world of wine, great Cabernets need some time in the bottle before drinking. Cabernet Sauvigon is a dense enough grape that it gains texture and silky qualities from age in the bottle as well as wood.

Again, one of our most popular wines, our good friend Jan Pierini, who owns Allegresse Vineyards, which contains 15+ acres of the most pristine and well manicured vineyards you’ve ever seen, supplied the fruit. While most vineyards produce around 10 tons per acre, she produces less than 4 tons an acre on single, right-turning cordons. The fruit we get from her vineyard is always perfect and poised every year to become a great wine. The grower, meticulous with the same commitment to excellence as our winery, practices selective fruit trimming, and at harvest inspects the grapes to pull only healthy bunches. For this trip we sent Our Transport Team in a 25 foot flat bed truck to pick up our largest shipment of the year in a grueling 24 hour turn around trip with minimal sleep and a lot of physical labor.
This is a great deal when compared to the Laguna Canyon Cab, which uses the same fruit and is priced over $40 a bottle. Look for notes of strawberry, cola, a bit of toasted cherries, sweet and dry at the same time. We anticipate this to settle down and evolve over the next 7 years.
2004 Cabernet Sauvignon
Allegresse Vineyards
The 2004 Cabernet bursts with dense plum, cherry, and blackberry while carrying a nose full of toast and vanilla with tannins that coat the entire mouth. The finish is a compelling cranberry that lingers for quite some time.
2004 Cabernet Sauvignon
La Cresta Vineyards
Given the Rumour name but 100% Cabernet, the La Cresta grapes where harvested from the South Coast Marietta on October 12th, 2004.
